Wowza! It’s been busy. I’ll quickly share one recipe, although I promise you I have been feeding Ryan lots of delicious things the past 2 weeks. But tonight we were craving something sweet, and since we decided to stop buying ice cream, there was nothing to satisfy the craving except… microwave brownies!
I’d never thought I would try it..but we were desperate. And it took all of 5 minutes to make and the only measuring utensil I needed was the tablespoon.
Brownie for One in the Microwave
2 tbsp vegetable oil
2 tbsp water
a dash salt
2 tbsp unsweetened cocoa powder
3 tbsp sugar
2 tbsp all-purpose flour
In a coffee mug mix water, oil, vanilla extract, and salt. Whisk well. Add cocoa powder; whisk well. Add sugar; whisk well. Add flour; whisk well.
Microwave for 60-75 seconds. 60 seconds for a slightly molten bottom, 75 seconds for uniformly done. Verdict? Yum, really chocolatey though, fyi! Would make it again when I am craving something sweet and don’t have the time to make a large batch.
