Chocolate Chip Scones (gluten free!)

Everyone loves scones, but finding gluten free scones is difficult.


Mmm, these look like they are full of gluten because they look so good, but they’re not.

Chocolate Chip Scones

1 cup flour
1/2 tsp xanthan gum (if using gluten free flour without it mixed in)
1/4 cup sugar
1 and 1/4 teaspoons baking powder
1/2 tsp salt
3 tbsp butter cut into pieces
1 egg
2 tbsp milk
1 tsp vanilla
1/4 cup roughly chopped semi-sweet chocolate

1 tbsp milk
2 tsp sugar

Preheat oven to 425 degrees. Combine the dry ingredients in a bowl.
Cut in butter with a pastry blender, fork, or fingers.
In separate bowl blend egg, milk, and vanilla. Add to dry ingredients and mix until combined.
Chop chocolate chips and stir them in.
Form a circle or square on greased baking sheet. The dough is sticky so you may need some additional flour.
Use a pizza cutter to cut desired sizes.
Brush top with milk and sprinkle with sugar.
Bake for 12-15 minutes.


Weekend suggestion: bake these and enjoy your christmas tree!
