Ingredients
3 medium-large potatoes, cubed (more the merrier)
4 cloves fresh garlic, chopped or use garlic press (I just got one and I love it!)
2 cups of cooked ham, cubed
2 cups celery, chopped
6 cups chicken/beef broth (equal to 6 bullion cubes and 6 cups water)
1/2 tsp dried thyme leaves
1/4 tsp salt
1/4 tsp pepper
1/2 tsp dried parsley
I love using the crock pot to make this soup.
Prepare the bullion cubes as directed on the stove, once they are dissolved pour the broth into the crock pot.
Wash and cube potatoes, add to crock pot. Wash and chop celery, add to crock pot. Cube ham, add to crock pot.
Add spices and garlic. Slow cook on high for 2-3 hours or until potatoes are soft.
Other great add-ons that I didn’t have on hand could include: carrots, onions, corn.
