This is definitely a go-to recipe if we’re out of ideas. And it’s great because it can easily be modified to serve one or ten!
Ingredients (serves 2 with lots of leftovers)
1 package of kielbasa sausage – choose your favorite!
3 large peppers – red, yellow, orange, green, whichever
1 large onion
3-4 large potatoes – I used baking potatoes, but reds work, just use more of them
Seasonings of your choice – I used italian seasoning, garlic, and fresh ground pepper
Preheat the oven to 350 degrees. Chop the potatoes, it doesn’t matter what size you cut them, but the thicker they are, the longer they will take to bake. I cut mine moderately small.
Then chop the peppers and onions, not too small otherwise they will burn. Throw the potatoes, peppers, and onions into a mixing bowl.
Next, add enough olive oil to coat everything in the bowl, mix, and then add your desired spices, mix again.
Spray a baking sheet and pour the potatoes, onions, and peppers onto it. Chop up the kielbasa into pieces about the same size as the potatoes, add to the baking sheet.
Put the pan in the oven and bake for 30-40 minutes. Stir the mixture every so often to prevent burning/sticking.
Tips: Sometimes I put the potatoes in by themselves right after I chop them because they take the longest to bake, it speeds up the process. And it’s great with barbecue sauce!

Kielbasy improves most things haha. I grew up with a similar version only made on the stovetop with salt, pepper and garlic.

I have always loved kielbasa and used to cook it often when our children were young and at home. These days we try to watch out waist line so it’s not on my list…but I do love it!!! Such comfort food! Visiting from Masterpiece Monday!
