Double Chocolate Chip Muffins - The First Year Blog #DoubleChocolateChipMuffins

Don’t even tell me that chocolate on chocolate isn’t a food group!

Ingredients

2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 tbsp baking powder
1 tsp baking soda
1 tsp salt
3/4 cup sugar
1/2 cup butter, melted
2 large eggs
1/2 cup milk
1/2 cup yogurt
2 tsp vanilla
1 cup semi-sweet chocolate chips, chopped

Preheat the oven to 375 degrees. Either place muffin liners in the pan or spray it- I hate wasting muffins liners, if only they were edible then maybe I’d use them!

Whisk together the dry ingredients. In a separate bowl, mix together the sugar, butter, eggs, milk, yogurt and vanilla.  Add the wet ingredients to the dry ingredients and stir just until the batter begins to come together. Chop your chocolate chips (I use my slap chop!) or use mini chips, then gently mix them into the batter. You could also substitute nuts or fruit, but that would defeat the purpose of DOUBLE chocolate chip muffins (-:

Scoop the batter into the muffin pans. Feel free to add more chocolate chips on top. I used 3 trays of mini muffin pans (36 muffins in total, plus 1 regular muffin).  Put in the oven and bake for 10-15 minutes for minis or 20-25 minutes for regulars. And these freeze well!

So if you’ve kept up to date with my latest posts this past week, you would know that I challenged myself to not check any blogging related statistics for 1 week (see it here). My week is almost up (the 12th) and this was a fantastic idea to get back in sync with Jesus. It wasn’t easy and I did have a “I. Just. Want. To. Check. My. Blog. Stats.” moment (or two, ha). Someone people probably think I am ridiculous, but many bloggers would probably attest to the same statistical obsession while they are trying to grow their blog. Now, here’s the kicker.. I think Jesus is challenging me to continue this “strike” through lent. 40 days. Ekk. If Jesus can survive in the desert with no food for 40 days, I should be able to do this. I need to remember that giving up my blog stats is not just about giving them up; it’s about seeking and glorifying Christ in my everyday life.

    Oh, I totally understand the blog stat obsession! It seems that the longer I blog, the less I check my stats. It’s a good thing, for sure :)

    Yep, chocolate is definitely a food group in my world! I’m trying to grow my blog as well….and you’re right, it’s easy to get obsessed with numbers! {You can add one to your stats, I’m a new follower ;-)}
