Sweet Easy Chili - The First Year Blog

Can you ever have too many chili recipes? This one is different..not spicy, but sweet and delicious.

Ingredients (makes 6+ servings)
Adapted from All Recipes

1 pound ground beef or turkey
6 garlic cloves, minced
2 tbsp dried oregano
2 tsp chili powder
1 tbsp dried basil
2 (15 oz) cans red kidney beans, rinsed and drained
2 (15 oz) cans black beans, rinsed and drained
3 (14.5 oz) cans diced tomatoes
2 (15 oz) cans corn
3 tbsp sugar
salt and pepper to taste

Begin to brown the ground beef / turkey in a skillet over medium heat. While cooking, add in the garlic, oregano, chili powder, and basil. Continue to cook and stir unto completely done.

Combine the kidney beans, black beans, diced tomatoes, and corn in a crock pot. Add in and stir the cooked ground beef.

Cook on low for 2 hours. Stir the sugar into the chili and continue cooking as long as you want, 2-6 more hours. Season with salt and pepper if desired.

Tip: This whole process can be expedited by cooking the chili in a large soup pot over the stove. After adding all of the ingredients (minus the sugar) let the chili cook over low-medium heat for 20-30 minutes. Add in the sugar, and cook for 20 more minutes. Or skip the sugar all together, I’ve had it both ways! Also, sometimes I find that diced tomatoes are still kind of large, so I’ll take a pair of kitchen scissors and cut them smaller, just stick them directly in the can!

    Chili is so good .. I busted out the crock pot the other day to make chili and ended up doing pulled pork instead. Oh well … next time!
