Black Bean Quesadillas

Black Bean Quesadillas - The First Year Blog #BlackBeanQuesadillas

This recipe is so easy to throw together, it tastes great, and you can put practically anything in it!

Ingredients
1 can (15 oz) black beans
1 cup corn
1/2 small onion, chopped
1 bell pepper, chopped
Shredded cheese
Fresh Cilantro
Taco seasoning or cumin
Avocado
Salsa
Tortillas

If you’re using small tortillas you can probably get 12, if you’re using large tortillas about 7.

Get out a tortilla (or 2 or 3!) and begin to put everything in it. It doesn’t really matter which order you put the ingredients on but typically I do.. black beans, corn, pepper, onion, cumin, avocado, cheese, and cilantro.

Crisp and brown the tortilla on both sides in a skillet over medium heat, no need to spray the skillet. If you want to easily cut the quesadillas, use a pizza cutter. Serve with salsa, mmm!
