Honey Parmesan Pork Roast - The First Year Blog #PorkRoast

Oh my goodness, this dish could have been served at a restaurant! 

1 (2-3 pound) boneless pork roast
2/3 cup grated parmesan cheese
1/2 cup honey
3 tbsp soy sauce
2 tbsp dried basil
2 tbsp minced garlic
2 tbsp olive oil
1/2 tsp salt
2 tbsp cornstarch
1/4 cup cold water

Spray the crock pot with non-stick cooking spray and place the roast in it. In a small bowl, combine the cheese, honey, soy sauce, basil, garlic, oil and salt and pour over pork. Cover and cook on low for 6-7 hours or until a meat thermometer reads 160°.
Remove the meat from the crock pot but it keep warm. Skim the fat from cooking juices left over in the crock pot either by chilling it if you have time or you can try and use ice cubes. Transfer the juices to a small saucepan and bring to a boil. Combine the cornstarch and water until it’s smooth by gradually stirring. Bring to a second boil and stir for 2 minutes or until thick. Serve with the roast. I also made garlic mashed potatoes, prepare as you would regular mashed potatoes.

3-4 pounds potatoes
1 stick butter
4 tbsp milk
6-7 garlic cloves, minced
