I love this recipe because it is so easy, and looks and is super delicious!
1 box of your favorite brownie mix
1/2 cup peanut butter chips
1/2 cup semi-sweet chocolate chips
3/4 cup creamy peanut butter
Makes about 36 mini brownie cups
Preheat oven to 350 degrees. Spray mini muffin cups.
Prepare the boxed brownie mix as directed. Spoon batter evenly into mini muffin cups (about 1 tbsp). Bake for 13-15 minutes or until the top is set and a toothpick inserted into the center comes out slightly wet. After you take the brownies out of the oven, wait for the centers to fall upon cooling (mine didn’t!). If they don’t fall by themselves, use the back of the tbsp to make a divot in each for the peanut butter.
Place the peanut butter in a small microwaveable bowl. Microwave on high for 45 seconds, then stir to get a liquify consistency. While the brownies are still warm (wait at least 5 minutes after you pull them out of the oven) spoon about a teaspoon of peanut butter into the center of each brownie. Top with semi-sweet chocolate chips and peanut butter chips. Let them cool completely in the pan before removing, and I found it best to store them in the fridge.
I didn’t have peanut butter chips on hand, so no big deal if you don’t!
